I hope you have all been enjoying your craft projects. Today I decided to do something a little different and bake some Easter cakes – yummy! 🙂
These cupcakes can be made for any occasion as you can decorate them as you like. Just use the basic recipe for scrumptious cakes that everyone will enjoy all year round.
Through basic trial and error I found the easiest, quickest way to make these cakes is to weigh out all the ingredients, throw it all into a food processor to mix and then bake. Now I use this every time and it works a treat 🙂
To make 12 cupcakes you will need:
6oz self raising flour
6oz caster sugar
Put all the ingredients into the food processor and whisk until smooth and creamy. Spoon the mixture evenly into the cupcake cases and bake in the oven for about 25 mins at 180°c until spongy.
Leave to cool before decorating.
To decorate my Easter cakes I made butter icing using 2oz butter and 4oz icing sugar. I covered just the tops of the cakes then sprinkled on some chocolate flakes and topped them with a couple of chocolate eggs.
I’m no Mary Berry, but these cakes were absolutely gorgeous, and they went down well with the rest of the family too.
